Sometimes, ya just need a new sandwich recipe. Green Greek goddess sandwich to the rescue! It’s vegetarian and everything your tzatziki-loving tastebuds are craving.
I’ve said it before, but I used to eat a turkey sandwich every day when I was in high school. Occasionally I’d be wild and pack a peanut butter sandwich instead, but those were my only two options. Granted, I didn’t mind it at the time, but since becoming a food blogger, I find myself craving new foods a lot more frequently than I used to. There’s nothing wrong with turkey sandwiches, but I need to switch things up from time to time.
Also, maybe I’m the only one like that because I feel like I know a lot of people who are completely fine eating the same thing for breakfast and/or lunch every day. It’s routine. Heck, I eat eggs for breakfast five or six days a week! But, I need something different on that seventh day. That’s where this Greek goddess sandwich comes in: when you just need something different and new.
This raw veggie sandwich is packed with spinach, red onion, avocado, and cucumber, PLUS fresh mozzarella cheese and homemade tzatziki sauce. It’s easy and a great way to use up a few veggies/a ripe avocado. HOLLA. I’m the queen of buying five avocados at a time and then forgetting about them. I know, who does that?!
If you’ve never made your own tzatziki sauce, you’re going to want to start now. It’s crazy easy aka simply yogurt with cucumber, dill, lemon, etc. You throw everything into a blender and THAT’S IT. Yummy sauce that you can use on this sandwich, in a quinoa bowl or even on a salad! Versatility at its finest.

- Red onion
- Avocado, sliced
- Fresh mozzarella, sliced
- Tzatziki sauce:
- 2 garlic cloves
- ½ cucumber
- Juice from ½ lemon
- 2 tsp fresh dill
- 2 mint leaves
- ½ cup plain Greek yogurt
- Salt and pepper to taste
- Slice vegetables and set them aside.
- For the sauce: combine garlic, cucumber, lemon juice, dill, and mint in a blender and pulse.
- Pour ingredients into a bowl and add the yogurt; stir by hand until everything is combined.
- Spread tzatziki sauce onto bread and then add vegetables.
