Cheese, cheese, cheese—oh how I adore you. I enjoy you in many forms, but especially in the form of a grilled cheese sandwich. Growing up, grilled cheese’s were my go-to after school snack or weekend lunch. They were simple, filling and oh-so-cheesy. I liked making them on my own, but I especially enjoyed when my mom would make me one because mom food is the best food, even when it is just a simple grilled cheese. Though I must admit, plain ole grilled cheese gets a bit boring after awhile. So, I thought I’d spruce things up a bit with this Mediterranean flavor inspired sandwich!
Mediterranean flavors are kind of the best aren’t they? When I think ‘mediterranean’, I automatically think of salads. I have NO idea why, because this flavor combination can be used in many different food forms, including sandwiches.
Besides cheese, it includes tomatoes and kale and onion and California Black Ripe Olives. Why have JUST cheese when you could have all of that other fun stuff too? These add-ins make the sandwich healthier, more filling, filled with nutrients, even more flavorful, and the best part is that it’s just as simple. There are few things in life I enjoy more than a simple sandwich recipe (besides massages and chocolate and going on vacation, of course).

A kiiiiiind of cool fact about olives—listen up! California black ripe olives are as good as they taste and contain Vitamin E, iron, Vitamin K, and fiber. They are packaged at their peak to preserve nutrients for year-round enjoyment. Who knew?! I didn’t. Olives are good tasting but they’re also good for you. Besides sandwiches, you could easily add them into salads, soups or casseroles.

- 2 pieces bread of your choice
- 2 tsp organic butter
- 2 slices feta cheese
- 3 red onion rings
- 1 slice tomato
- ¼ cup kale, stems removed
- 2 tbsp California Black Ripe Olives
- Butter both pieces of bread. Set one piece, butter side down in a skillet over stovetop.
- Place cheese, onion, tomato, kale, and olives on top of bread and then place the other piece of bread overtop, butter side up.
- Cook until bread is slightly browned and then carefully flip over so that the other piece of bread cooks and cheese is slightly melted.
- Remove from skillet and enjoy!
