Ok so. Saturday. Saturday morning we bummed around the apartment before heading out the door so I could meet up with the big man himself aka Arman. We got coffee and walked around the city to enjoy the nice weather and somehow—coincidentally yet not—we ended up at Whole Foods. I love getting the chance to meet blog friends in real life, and this was no exception. Thanks blog world, for being so freaking cool.
After we parted ways, Shay and I bopped into Forever 21 so I could buy workout clothes that I needed/actually didn’t need. Because I don’t work in an office setting, I can pretty easily convince myself that it’s ok to buy more leggings/tank tops/sports bras—they’re actually all I wear. After purchases were made, we made our way to SoHo because I’d never seen that part of the city, The one thing Shay was really good at finding this weekend were free events (link the Perrier one I mentioned yesterday). There was a launch party going on at Folli Follie, a new upscale handbag and jewelry store. The party included a DJ, ice cream, cocktails, hair braiding, and flash tattoos. Shay got a tattoo and I got my hair braided and we left feeling a little happier (thanks ice cream+vodka) than we did when we arrived.
We continued window shopping before heading back to her apartment to meet up with Richelle, who had been working earlier that day. The three of us then headed out to Brooklyn so I could meet up with Jenna, my freelance boss. I met her, her boyfriend and her mom out at St. Mazie on an adorable back patio for a drink and it was really nice. I may have thanked the blog world earlier in this post, but now I’m going to thank New York for having so many cool people! Following the drink, I met up with Shay and Richelle at a nearby restaurant called La Esquina where we ate…. MORE CHIPS AND GUACAMOLE. I wasn’t mad. We ended the evening at the Wythe Hotel’s rooftop bar in Williamsburg, where we enjoyed the cool breeze and a few drinks before calling it a night.
Can you tell I had fun? I did. One thing I definitely didn’t do was eat super healthy, and that’s ok. Like, more than ok. HOW-E-VER, I am pumped to get back to my normal eating schedule that doesn’t involve margaritas with every meal. Like, this quinoa breakfast bowl, for example.
This bowl is filled with quinoa, oats, blackberries, mint, chocolate, and cinnamon. Sooo basically all of the best foods ever. Besides the taste, the best part is that it keeps you full for a very long time! Nothing is worse than when you eat breakfast and are hungry 1 hour later. NOTHING. Another thing about this bowl.. I recommend serving it warm. I’m usually a little weird about eating warm foods (i.e. oatmeal), but warm quinoa isn’t strange or mushy or anything (you already knew that) so DO IT. It’s good. Make the quinoa, add the other ingredients and stir in the blackberries and they will practically melt!
One note: if you do end up making the quinoa the night before and reheating it, the blackberries may not melt quite as well. If this is the case (or if you just want even more blackberry goodness) you can blend up a few blackberries with a bit of water in a blender and pour it overtop. It’s not totally necessary, but it is delicious.
- 1 cup cooked quinoa
- 1 cup oats
- ½ cup blackberries
- 2 mint leaves
- 1 tbsp dark chocolate*
- ⅛ tsp cinnamon
- Place oats and warm quinoa in a bowl.
- Add mint, cinnamon, chocolate, and blackberries and stir so chocolate and blackberries melt a bit.
- Top with additional cinnamon/chocolate if you prefer.
