I know Friday’s are typically drink day, but don’t even deny that you couldn’t use a drink right now. …Unless you’re reading this at, like, 7 in the morning, then you should probably hold off until later.
I know I talked in this post about how I’m a beer girl through and through. Most women I know are like ‘WINE OMG’ and I’m like ‘wine yum sometimes’. That is, unless it’s sangria. I LOVE sangria. Why? Because there are approximately one million different versions of it, and I’ve honestly never had a bad sangria.
Can you believe this upcoming weekend is already MEMORIAL DAY weekend?!! Side note: I noticed that every time a holiday is coming up, I feel the need to make an alcoholic recipe. Hopefully you’re not mad about it because holidays=drinking, right? Right.
So… Memorial Day. Wtf. This means it’s practically June which means I’m almost one year away from my wedding. Um….what. I promise I’ll do a wedding update once Miguel and I get a few more things booked. Currently figuring out catering… I don’t want to write a post and only share one thing, ya know? Speaking of Miguel, our anniversary is coming up this week. Four years. Hot damn, where did the time go?
Sangria kind of makes me think of Miguel because often times when we go out to eat for a special occasion, I’ll order a sangria to be fancy. Are sangria’s even fancy? I doubt it, but compared to beer, yes. I’M SO FANCY. And annoying, sorry.
This apricot sangria is amazing because apricots are amazing. When was the last time you ate an apricot? It had been YEARS since I’d eaten one and I’m so glad I picked one up at the store. They’re now a necessary purchase when I go to the grocery store.
For this sangria (or any sangria for that matter), the longer you let the alcohol absorb the fruit, the fruitier it will be. This is absolutely true, but I only waited approximately six hours and it tasted great. I also ended up smashing the blackberries with a fork (did I mention I’m fancy) so that their flavor would come out a bit more. It worked! You can obviously use a muddler if you happen to own one of those, but a fork/spoon works just fine.

Apricot Blackberry Sangria
- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 4 servings
- 1 bottle white wine
- 1/2 cup champagne
- 3 apricots
- 1/2 cup blackberries
- 1 cup club soda
- Remove seeds from apricots and combine apricots and champagne together in a blender; pour into large pitcher/container.
- Add wine, blackberries and soda and let sit in the refrigerator for at least two hours**
- Pour, add ice and enjoy!
**The longer the sangria chills, the fruitier it will be
