I thought it would be a good idea to kick the week off with chicken salad. When the weather starts warming up—which it’s supposed to be close to 80° today!!—I start craving all.the.salads. And not just lettuce-based salads. I’m talking chicken salad, egg salad, macaroni salad—I love them all.
I’m a huge fan of my Cottage Cheese Chicken Salad recipe, so I really wasn’t sure how I was going to be able to top it. Sometimes when I’m seeking flavor inspiration, I simply go to the grocery store and browse. I have certain foods and flavors that are safe for me—safe meaning I’m used to working with them and I know the outcome will be successful. Mangoes, on the other hand, were something I’d never cooked with before. So I bought two and booked it out of the store with a dorky smile on my face.
I got home, placed my mango on the counter and just stared at it. Now what? How does one cut a mango??
I’ve praised Google before, and now I’m praising YouTube. Thank you, YouTube, for teaching me how to cut a mango. If you’re wondering, I watched this tutorial which was super short and super simple. Woohoo!

This mango chicken salad is flavorful and full of healthy fats and protein aaaaand it’s PALEO for any and all of my Paleo readers. I know it’s not quite summertime, but we’re getting there. This is the perfect dish to take to a family gathering or on that picnic you’re going to force your significant other to go on with you. ….no? Just me?

Paleo Mango Chicken Salad Sandwich
- Prep Time: 10 mins
- Cook Time: 10 mins
- Total Time: 20 mins
- Yield: 2 sandwiches
- 2 chicken breasts
- 1 tbsp olive oil
- 1 mango
- 2 avocado
- 3 tbsp yellow onion
- 1 tbsp cilantro
- 1 tbsp dairy free yogurt (I used So Delicious)
- 1 tomato
- Juice from 1/2 lime
- Chop chicken up into bite-size pieces.
- Heat olive oil in a skillet and cook chicken until cooked all the way through and slightly golden on the outside.
- While chicken is cooking, chop up mango, onion, tomato and cilantro and place in a bowl; add chicken.
- Mix together and then add avocado, yogurt and lime juice and stir until everything is mixed together.
- Serve on your favorite bread.
