Friday oh Friday how I love you so. Wait, scratch that. This was totally supposed to go up yesterday but clearly that didn’t happen. Heh, whoops! Today I want to talk about mug cakes and the ‘Roast of Jusin Bieber’. …what? So random. Let’s talk about the mug cake first.
I asked followers on Facebook to vote on their favorite kind of dessert, and single serve desserts won! Woohoo! I personally love all desserts, but mug cakes are perfect for that after dinner sweetness we all crave (you know you do) AND they’re a great way to establish portion control 🙂
This coconut mug cake is of course Paleo and it’s really, really delicious when topped with a little bit of chocolate. Though, I suppose I could say that about most desserts, huh?
Now for the ‘Roast of Justin Bieber’… I know I’m a few days behind, but it hasn’t been that long (it aired this past Monday for anyone who missed it), so I think it’s ok to talk about.
Let me start by saying that I’m not a Beliber. I don’t dislike him per se, but I don’t enjoy his music and I’m not a fan of him personally—I suppose I’m pretty indifferent. That being said, I thought the ‘Roast’ was SO FUNNY. I’ve never watched any of Comedy Central’s past ‘Roasts’ so I didn’t really have anything to compare it to, but I was LOLLLLLIng the entire time.
For anyone who has no idea what I’m talking about, the ‘Roast’ is a two hour event where a handful of celebrities make fun of each other as well as whoever the ‘Roast’ is about. In this case, it was Justin Bieber. The line up included Kevin Hart, Snoop Dogg, Ludacris, Shaq, Chris D’Elia and….Martha Stewart. I got the biggest kick out of the fact that she was in the line up, sort of like ‘guess who doesn’t belong?’ Loved it. She was surprisingly hilarious which made the entire thing better.
Along with it being funny, it was clearly a huge PR move for Bieber to try and win some past fans over again because at the end of the show he apologized for acting like a complete idiot for the past year. We’ll see if it works.
So what’s my point? What am I rambling about? I have no idea. I guess I’m trying to tell you that if you’re looking for a good laugh, you should watch the ‘Roast of Justin Bieber’, and if you’re looking for a delicious, Paleo, single serve dessert, you should make this Paleo Coconut Mug Cake 🙂Print
Paleo Coconut Mug Cake
- Prep Time: 5 mins
- Cook Time: 2 mins
- Total Time: 7 mins
- Yield: 1 cake
- 3 tbsp coconut flour
- 1 tbsp coconut sugar
- 1/4 tsp baking soda
- 1 tbsp honey
- 1 tbsp coconut oil
- 1 tbsp coconut milk
- 1 egg
- For chocolate:
- 1/2 avocado
- 2 tbsp unsweetened cocoa powder
- 1 tbsp coconut oil
- 1 tbsp organic maple syrup
- Combine ingredients (minus chocolate ingredients) into a mug and stir together.
- Place in microwave and cook for 2 minutes**
- Top with chocolate and enjoy!
- For the chocolate, mash avocado with a fork in a bowl and set aside.
- Melt cocoa, oil and syrup in a saucepan over stovetop.
- Once melted, pour overtop avocado and mix together.
- OR simply melt dairy free chocolate overtop of mug cake.
**I would recommend putting it in for 1 minute 30 seconds and then checking it–everyone’s microwave is different!
