Oh guys, where in the world did this week go?! It absolutely flew by for me, and I’m happy to welcome the weekend with open arms which simultaneously devouring this chipotle yogurt dip because—whaddaya know—Miguel doesn’t like shallots, one of the main ingredients in this recipe. OH WELL, MORE FOR ME.
As a complete and total side note, have you ever gotten a flat tire? I was driving over to my moms house Wednesday when BAM, it happened. I’d never gotten one before, but let me tell you, it’s a pretty distinct sound and feeling. I immediately pulled into a nearby gas station and could actually hear air escaping my tire. Luckily, my moms house was only about a mile or so from the gas station, so I sped there, praying the entire way that my tire wouldn’t go completely flat while driving. I made it to my moms just in time, because as I got out of my car my tire was pretty darn flat. I mean, talk about a scary feeling! I imagine many of you have had this experience before, and I was just fortunate that it happened near my moms and not on the highway and/or in the middle of nowhere.
Also, thanks technology for providing services like roadside assistance. THANK YOU. Now that it’s Friday, I’m ready to get stuff done all weekend long, but absolutely relax at night, preferably while stuffing my face.
I don’t know what it is about chipotle seasoning, but it’s without a doubt one of my go-to spices. It’s a great flavor that pairs perfectly with something kind of flavorless, aka yogurt. Yup, I just said that. Truthfully, this dip couldn’t be easier. It’s basically yogurt, chopped shallots (you don’t even have to cook them!), chipotle seasoning, and some salt and pepper. When I make recipes with five or less ingredients, I sometimes ponder if they’re even worth sharing because they seem too easy, but I know those are the recipes a lot of you tend to make.

- 1 cup plain Greek yogurt
- 2 tbsp shallots, finely chopped
- ½ tsp chipotle seasoning*
- Salt and pepper to taste
- Chives for garnish
