These Nut Butter Superfood Truffles are made with the nut butter of you choice and filled with superfoods, making them the perfect grab-n-go snack!
Hi my name’s Erin and I love superfoods, and if I’m not mistaken, I think you do too. These superfood truffles are like mini bites of goodness, both in taste and for you! Oh and when they’re covered in powdered sugar they kind of resemble donuts so…. WIN.
I was in Whole Foods the other day picking up some hemp seeds for Green Blender when I got super distracted and decided to buy a few other things. …and that’s how these truffles were born. Typical. Oh and I must clarify: I didn’t want to call these balls or bites, so I called them truffles, but the texture isn’t that of a traditional truffle because these are raw truffles. Still good though! Just don’t be mad at me when you realize the texture isn’t silk-like.
Phew, glad we got that out of the way.
So anyway, these truffles are made with the nut butter of your choice—peanut butter, almond butter, cashew butter, etc.—whatever you prefer! Once you’ve got that, you add in your superfoods like hemp seeds, chia seeds, goji berries, maca powder, and moringa (or any superfoods you have on hand that won’t take too much away from the taste, i.e. don’t use something like pomegranate or acai powder because they’ll be too strong). Last, you’ll add in your sweetener like dates and maple syrup (or honey if not vegan).
Ok, ok I guess the actual last step is covering these truffles in powdered sugar! You gotta save the best step for last. If you don’t want the extra sugar and/or you want even more chocolate, you can use cacao instead. I personally don’t love the taste of truffles covered in cacao, hence the powdered sugar, but you do you.
These truffles aren’t too sweet and they’re full of vitamins, nutrients, protein, fiber—all the goods—and are perfect for snackin’ on. The amount you end up with will depend on how large/small you make them, but I ended up with 20 exactly.
Let’s get snackin’!
- 1 cup cashews/almonds/peanuts*
- 10 dates, pitted
- ¼ cup hemp seeds
- 2 tbsp chia seeds
- 2 tsp goji berries
- 2 tsp maca powder
- 2 tsp moringa
- 1 cup nut butter of choice (cashew, almond, peanut, etc.)**
- ¼ cup cacao powder
- 3-4 tbsp maple syrup
- Powdered sugar/extra cacao for topping
- Place nuts and dates in a food processor and pulse for 10-20 seconds.
- Add hemp seeds, chia seeds, goji berries, maca, and moringa and pulse; add the nut butter through the top of the food processor, which should help glue everything together.
- Next, add the cacao and last, add the maple syrup so that everything is perfectly combined.
- Roll mixture into bite-size truffles and place on a baking sheet or in a bowl.
- Optional: cover them in powdered sugar/cacao powder.
***Serving size will depend on the size of your truffles.
