A salad recipe that combines two classics—the BLT and caesar—into one tasty and nutritious recipe. It’s made even more delicious with the additional and a soft boiled egg, too!
Oh my gosh I am SO excited to be partnering up with Eggland’s Best for the next three days!! I’ve mayyyyyybe mentioned it before, but eggs are in my top five favorite and most eaten foods, ‘cause they’re so gosh darn versatile, especially when they’re EB eggs, which are packed with so many vitamins and nutrients. For day one, I thought I’d bring you a salad.
*Cue the moans and groans*
WAIT—but it’s a BLT and caesar salad combined into one! Veggies plus cheese and croutons aka balance.
How are we doing with our New Year’s resolution to eat healthier, btw? Even if it’s not your actual resolution, I feel like it’s something we all strive for at the beginning of every year. Hopefully you can add this salad to your salad repertoire. Let’s talk about it: it’s lettuce topped with salmon, bacon, tomato, avocado, croutons, parmesan cheese, your favorite caesar dressing, and a soft boiled EB egg! Talk about filling and possibly the best salad ever.
I opted to use this salmon recipe (but with less garlic) because it’s so easy, and I used store bought dressing, because as much as I love the idea of making my own salad dressing, if it’s more than three ingredients, I’m probably not going to do it. Just remember that there’s already a ton of flavor in this salad, so you probably won’t need a ton of dressing.
When it comes to eggs, I try to be mindful of my purchases. For all you egg eaters out there, do you have a particular brand you’re obsessed with? - 1 salmon filet, baked (I used this recipe)
- 2 slices bacon
- 1 Eggland's Best egg
- 5 cups lettuce
- ½ cup tomatoes, sliced
- 1 avocado
- 1 cup croutons
- ½ cup shredded parmesan cheese
- 2 tbsp caesar dressing of your choice*
- Heat bacon in a skillet and cook completely; set aside and then cut or break into bite-size pieces.
- Soft boil the egg over the stovetop.
- While egg is cooking, place lettuce in a large bowl and add tomatoes, avocado, croutons, and cheese to the bowl; stir to combine.
- Next, add the baked salmon to the salad, along with the bacon; add the caesar dressing and stir to combine.
- Last, add the soft boiled egg
