This Simple Bacon Guacamole puts a fun twist on a classic recipe. Bacon pieces are added to traditional guacamole to add flavor and fun to this recipe—just 7 ingredients!
I’m feeling antsy. Antsy with EXCITEMENT that is. Now, I don’t want you getting too excited because my excitement is only because I’m pumped to share this BACON guacamole recipe.
I know, I know—wtf is wrong with me? I couldn’t help myself.
Truthfully, we don’t buy bacon that often, but when we do I feel the need to pair it with everything, including guacamole.
Speaking of guacamole, this is one of the appetizers I left at home instead of taking to Miguel’s work party so…. all I gotta say is, more guac for me! Yeah I ate bacon guacamole for dinner one night…judge away.
I think we can all agree that guacamole makes every party better. Or rather, every single situation better. LIKE CHIPOTLE (the restaurant, not the flavor). Except when there’s a sign that reads ‘we are currently out of guacamole, we apologize for the inconvenience’ on the door and you almost turn around and go home because you’re so pissed. Not today! Today we have a LOT of guac.
So…bacon and guac. Did you know they go hand-in-hand? It’s true, they do. Bacon just adds a little bit more flavor and salty goodness to that already delicious traditional appetizer. I originally used two slices of bacon in this recipe, but I’m going to suggest you use three because two just didn’t seem like enough to really have an impact on the recipe. THREE SLICES or maybe more if you wanna get crazy.
Not too crazy though. It IS only Thursday. But hey, thirsty Thursday, which PS I’ve never really gotten on board with. I suppose if you’re going to it should probably be in college…? I don’t know. I’m old. If you do partake in TT (<—worst abbreviation), you should add bacon guacamole to the menu. Seriously, your friends will thank you.
- 3 ripe avocados
- Juice from 1 lime
- ¼ cup red onion, diced
- ½ serrano pepper, chopped*
- 1 vine ripe tomato, diced
- Handful of cilantro
- 3 slices of bacon, torn into pieces
- Salt to taste
- Cook bacon in a skillet over stovetop. Once bacon is done cooking, place on a paper towel and allow a few minutes for it to cool before breaking it into small, bite-size pieces.
- While bacon is cooking, dice onion, tomato and pepper and set aside.
- Place avocado in a bowl, add lime juice and then mash the avocados with a fork.
- Stir in onion, tomato and pepper.
- Last, stir in cilantro, bacon and salt.
- Serve with chips and enjoy!
**I failed to measure the exact serving size, but I'm guessing it's around 2 cups
