This Mocha Avocado Pudding recipe is just 6 ingredients and ready in 30 minutes or less! A healthy dose of coffee and chocolate, and you can’t even taste the avocado!
There’s no denying that us healthy food bloggers love a good avocado pudding recipe. Add in some coffee and, well, there’s literally nothing better.
You know those mornings when you glance over at where your avocados are supposed to be only to realize that you’re completely out? <—actual tragedy. So then you go to the store and buy 17 avocados because you’re feeling like a part of you is missing, but then they all become ripe on the EXACT SAME DAY and you start panicking because, as much as you love avocado toast, you can’t force yourself to eat 22 pieces of bread in one day. Slightly dramatized, yes, but I know you know what I’m talking about. I was having one of those days and I NEEDED to use up a ripe avocado, and that’s how this pudding was born.
To be honest, it was born last year when I made this avocado pudding, only this recipe uses less chocolate because instant coffee is nowhere near as strong as peppermint extract. ….but I digress.
How was your weekend?! Mine kind of turned out to be a bust, as I somehow came down with a sneezing fit Friday night and most of the day Saturday and yesterday. I’m blaming allergies, but who knows. With that said, Miguel and I ended up going out to dinner Saturday night and then we met up with my friend, her boyfriend and her sister and we all got ice cream and chatted and it was lovely. So, not a total bust, but much more low-key than I had originally planned. Ah well—going with the flow is sometimes the way to go.
So about this pudding…
This recipe makes either one full cup of pudding, or two half cups like I have pictured. You’ll start by placing the avocado in your food processor and pulsing for 10 seconds or so, so it’s broken up but not completely smooth. You can then add the remaining ingredients and pulse until everything is mixed, making sure to scrape down the sides a couple of times so the avocado is completely mixed in with the chocolate. For the sugar, I opted to use 1/4 cup maple syrup and 1/4 cup raw cane sugar, but feel free to sub coconut sugar or white sugar for the cane sugar if you don’t have any on hand.
This mocha avocado pudding is any coffee lover’s dream and the perfect mix of coffee and chocolate while still being relatively healthy. If you have yet to try avocado pudding, let this be your first try, and if you make this recipe (or any recipe!) be sure to tag #thealmondeater on Instagram.
