When I ask Miguel what he wants for dinner, every night, without fail, he will reply “chicken”. Yes, I’ve stopped asking and most of the time I ignore his request. Recently, though, I decided to honor it but with only one exception—I wanted to come up with a new chicken recipe for the blog. Yes, I base a lot of my meals off of the foods I’m craving. Not all of them, but a lot of them.
On another note.. have you ever noticed how many different kinds of fruits and vegetables there are? I walk into Whole Foods/Giant Eagle/Trader Joe’s/you get the point I go to a lot of grocery stores, buy my usual fruits (bananas, apples, oranges, grapes…the normal stuff) and don’t even bother looking at anything else. Sometimes I randomly stop and stare and be amazed at all the fruits and vegetables I’ve never tried before. I’m not going to swear on it, but I’m going to make it a point to try and eat more of a variety of fruits and veggies, starting with blood oranges.
That’s correct—I’d never eaten a blood orange before this recipe. GASP. If I’m being honest, I’m not a huge orange fan. I like orange chicken and orange cookies and orange chocolate, but oranges by themselves are just ok in my book. Miguel on the other hand loves them, so I buy them quite frequently.
Now as far as this chicken goes—what should you expect? Expect a combination of orange and herbs—rosemary, thyme and citrus to be exact. The citrus seasoning isn’t mandatory, but it does add an extra punch of orange flavoring that I personally love.
Your chicken will be juicy and EXTRA EXTRA flavorful if you decide to squeeze extra orange juice overtop. My suggestion? Do it because YOLO. ….Is that still a thing? Who knows. All I know is that if you’re looking for a flavorful chicken recipe, this is it.
- 3 chicken breasts
- 2 tbsp olive oil
- ½ yellow onion, sliced into strips
- 3 garlic cloves, minced
- ¼ cup chicken broth
- ½ tsp rosemary
- ¼ tsp thyme
- ¼ tsp citrus seasoning
- 1 blood orange
- Preheat oven to 350°.
- Heat olive oil in a skillet over stove top. Place onion and garlic in skillet and cook until slightly golden; remove from heat.
- Add a bit more olive oil to skillet; place chicken in skillet and cook until no longer pink.
- Place chicken in an oven safe baking dish. Pour chicken broth, garlic and onion overtop of chicken.
- Sprinkle rosemary, thyme and citrus seasoning overtop chicken.
- Cut orange in half and then cut the one half into thin slices. Place those slices overtop chicken and then place the entire baking dish into the oven; set the other half of the orange aside.
- Bake chicken for at least 30 minutes or until onions have continued to brown and chicken is no longer pink.
- Remove from oven; drizzle extra juice from orange overtop before serving.
