This bread. OOOOOHHHH this bread. To put it lightly, I demolished it. Miguel helped a little but… I mostly demolished it in a grossly fast amount of time. I posted this photo on Instagram and said that I was eating it as a snack the one night. Like, 1/3 of the loaf. What can I say? I love bread.
..more specifically, I love orange bread. The weird thing is that I don’t really like oranges by themselves. But, combine orange with chocolate and/or white chocolate and I’ll devour it. This was my first time making bread and I was SO HAPPY that it tasted as good as it did. Actually, scratch that, one time last year I tried making banana bread. “Tried” meaning that I made it and then couldn’t get it out of the pan and when I finally did it crumbled into a million pieces. Thankfully, I’ve come a long way since then and remember to grease my pans. <<just autocorrected ‘pans’ to ‘pants’ LOLZ.
This bread can be eaten for breakfast, or as a snack or as dessert or…. or or or if you’re really feelin’ it, for all three. MMMM yup. Though, I wouldn’t recommend only eating bread for every meal. I mean, whatever floats your boat, but don’t say I told you to do so. But did I mention there’s no refined sugar in this bread? It’s true–it’s sweetened purely by maple syrup and orange juice.
This bread is moist and… wait… let’s pause for a second. Can we all agree that moist is one of the top three grossest words? It is. And if you disagree then you’re wrong. Anyway, it’s MOIST in a good way with a slight orange flavor and every other bite you’ll get a white chocolate chip that will melt in your mouth. Aaaaaand now I’m pissed that I don’t have any. Great.
What’s a gal to do? Make another loaf, obvi. It’s really, really, really easy to make. Just see for yourself…
- 2 cups whole wheat flour
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp orange zest
- ½ cup orange juice
- ¼ cup maple syrup
- 2 tbsp coconut oil
- 2 eggs
- ½ tsp vanilla
- ½ cup white chocolate chips
- Preheat oven to 375°.
- In a large bowl, combine flour, baking soda, salt and zest.
- In a separate bowl, combine the juice, syrup, oil, eggs, and vanilla. Stir well with an electric mixer.
- Fold the wet ingredients into the dry ingredients and then add the white chocolate chips and stir with a spoon.
- Grease a 9x5 bread pan with a little bit of coconut oil and then add the batter.
- Bake for approximately 30 minutes or until dough is fully cooked.
