About a month ago, Miguel and I went to go see comedian Chris D’Elia at an Improv Comedy Club. If you haven’t heard of him, please Youtube him now because he’s hilarious. I’ll pause while you go do that.

Ok great 🙂 One of his memorable jokes from the evening was when he made fun of girls who say “I can’t even.” It went something like this…
Girl: Ughhhh omg I, like, can’t even right now.
Guy: You can’t even what?
Girl: No, like I just can’t.
Guy: What can’t you do?
Girl: You wouldn’t understand…ughhhh I, just, like CAN’T RIGHT NOW.
I died of laugher. So this oatmeal…. I JUST LIKE CAN’T EVEN. But seriously….
It’s so good I can’t even describe it. But I’ll try…. warm chocolate+warm caramel topped with salt. In a bowl. All warm and ooey gooey yum yum. I originally tried this recipe as an overnight oats recipe and then decided that it tasted better warm which makes this the official first oatmeal recipe on TAE. WOWWWWWWZA. I should probz make oatmeal more often for my oatmeal-lovin’ friends.
Ok but back to the ‘I can’t even’… does anyone else say that? Even if YOU personally don’t, you probably know someone who does or have heard girls say that. I hate to admit it, but I’ve definitely been that girl. Usually Miguel calls me out on it…

Ok but seriously… salted caramel oatmeal…to die for. Actually, salted caramel anything is to die for, especially this time of year. “this time of year” meaning still summer but also kind of like fall. I don’t know about where you live, but this past weekend it was actually cold on Saturday. Like, I needed a jacket and pants, which in my mind equals cold. Cold=fires in fireplaces and warm oatmeal in hand, yes? Yes.
- 1 cup oats
- 3 tbsp cocoa
- 2 tbsp chocolate chips
- ½ tsp coconut oil
- ½ tsp vanilla
- ½ cup milk
- 1 tbsp caramel sauce (I used Trader Joe's)
- 1 tsp salt
- Mix oats, cocoa, chocolate and vanilla together in a medium sized bowl.
- In a microwave safe dish, melt the chocolate chips and coconut oil together (approx. 1 min)
- Stir in the milk and caramel sauce and place in the microwave for your desired amount of time (depending on how hot you like your oatmeal); I did 1 minute.
- Remove from microwave, sprinkle with salt and enjoy!
