Today I have a super simple vegetable recipe for you guys (equally as simple as my Spicy Green Beans), only today we’re talking about a childhood favorite of mine: corn. Try to find me a kid who doesn’t like corn. Well, maybe the kids who don’t like to eat ANY veggies, but most kiddos pick corn over the green veggies. I know I STILL love me some good corn on the cob, but sometimes I’m looking for a way to spice things up–literally.
In comes this Chile lime corn recipe…
- 10 oz. frozen corn
- ½ large tomato, chopped
- 1 tsp chili powder
- Juice from ½ lime
- Salt and pepper to taste
- Cook corn according to the instructions on the bag; once done, place in large bowl.
- Add tomato, chili powder, juice, salt and pepper and stir until everything is mixed together.
