I know I already did a Fourth of July recipe on Tuesday, but what’s one more? Only this one is more of a dessert and doesn’t contain alcohol, though I suppose it could. May I present to you…drumroll please…strawberry jello cups! Or, in this case, Fourth of July jello cups.
These bad boys were inspired by none other than my own grandmother. You know those recipes that only grandma’s know how to make taste absolutely amazing? Well, pretzel jello pudding is one of those recipes in my family. ….Are you lost? Let me explain. Maybe you’ve heard of pretzel jello pudding before and maybe you haven’t, but it’s basically a layer of pretzels, a layer of whipped cream and a layer of jello all combined into one dessert casserole. It’s uhhhh-mazing. I was going to make that exact pretzel jello pudding, and I did, but let’s just say mine didn’t look quite as nice as my grandma’s usually does. Plus, I wanted something red, white and BLUE, not red, white and brown.
So that’s how these came to be. Strawberry jello for the bottom layer, a healthier middle layer with whipped cream, cream cheese and yogurt filling, and blueberries on top. Talk about a winning combination!
These jello cups would be great to bring to a family gathering this weekend. Speaking of which, I have no legit Fourt of July plans. How lame am I? Well, I’m at least planning on watching fireworks so that has to count for something. My family never really made a big deal out of the 4th. But, that was probably because, while we lived in Ohio, the rest of my family lived in Pittsburgh, so we definitely didn’t have family cook-outs. I’m not complaining, I’m just stating the fact that Christmas and Thanksgiving were always a much bigger deal as for as celebrations go. However, I AM excited to have both a relaxing and productive weekend. <<kind of sounds like an oxymoron, I know, but I’m hoping I can get a few things done while also being a bit of a bum. I finished Orange is the New Black two nights ago, though, so I won’t have that excuse to sit around and watch TV for hours on end 😉 Or, maybe I’ll start a new show. Ohhhhh the possibilities!
Strawberry Jello Cups
- 1 .30 oz. package strawberry jello
- 1 cup cool whip
- ½ cup cream cheese
- ½ cup plain Greek yogurt
- 1 cup fresh blueberries
- Make jello according to the package; pour evenly into two cups and place in the refrigerator for 3-4 hours.
- Once jello has set, mix cool whip, cream cheese and yogurt together in a medium sized bowl; place mixture overtop of jello.
- Last, add the blueberries on top of each cup.
