Summertime Tuna Salad

Happy Thursday everyone!
Serious question: am I the only one who feels like a cat when I eat tuna? I rediscovered it the other day in Trader Joe’s and decided to pick some up and boyyyy was I glad I did! They sell this certain kind with olive oil in it….Ohhhh my gosh this might sound crazy but it’s so much tastier doused in olive oil! ….ok totally not crazy because everything is better in olive oil in my opinion but ANYWAY I decided that I needed to do something with it rather than eat it straight from the can. 
In comes this delicious summery salad..

Crunchy kale and spinach with some…wait for it WAIT FOR IT… avocado! Sprinkled with ginger and lemon juice, this salad screams summer and is the perfect work-time lunch or an at-home dinner.

Right after this mini photoshoot I dove right in and ate it in a matter of minutes! No joke, it’s that flavorful.

So what if it reminds me of cat food–it’s SO good. Plus it’s filling and comes in different flavors, so many flavors that the other day I found myself in Target just staring at the different kinds of tuna and trying to decide what kind I should buy. Original? Sweet n’ Spicy? With olive oil? With sunflower oil?! So many choices. And, rather than throwing a ton of dressing on top, I opted for the lemon juice. Simple, light, flavorful, and delicious.

Summertime Tuna Salad
  • ¾ cup kale
  • ¾ cup spinach
  • ¼ cup tuna
  • ½ avocado
  • 1 tbsp lemon juice for dressing
  • Pinch of ginger
  1. Place ingredients into a bowl, sprinkle with lemon juice and enjoy!


Q: Does tuna remind you of cat food or am I so weird? Does me comparing tuna to cat food make this salad sound totally unappealing? ….sorry, that wasn’t my intention.

    Hehe, I had tuna last night, with sweetcorn! It was good, and cant say I feel like a cat, but you made me smile 😛 That salad does sound good though, and so much nutrition in there! Just what I need!

    That is so funny because I used to refuse to eat it because I thought it smelled like cat food! But now I absolutely love it! That salad is so simple and easy too! I will be trying this for sure!

    I am not a tuna fan.. probably something about it resembling cat food weirds out my taste buds? I keep trying it (and I have a recipe for a tuna salad with chickpeas and cabbage on my blog) but I can only try it every few months once I forget that I don’t love the taste again haha.

    Tuna always sounds super good to me! Buuuuutttttt I don’t like it unless it is loaded with 5 pounds of mayo haha…..I’m not a fan of fish too much. Maybe I’ll just add some greek yogurt instead then add it to a salad :) Or even better yet, shred the lettuce and add it and all the veggies to the tuna!!

    This salad screams perfection! I looove the avocado :)
    I love tuna, but I totally feel like a cat eating it too haha. Glad I”m not the only one.

    Hahaha I always say I’m actually a cat because I will eat tuna straight from the can – all my friends and fam think it’s SO gross. (it kind of is). I love the looks of this recipe though, super simple and I can see it breaking my cat phase.
